Idea: How about a mouse with an extra wheel, with high resolution and
no "clicks", for turning/sliding/whatever the knobs? Alternatively,
one could use a mouse and a separate rotary encoder for the other
hand, to do the tweaking. The latter sounds more ergonomically
correct to me.

I think there's too much separation between mouse and dedicated
controllers, as if the designers of the latter just *hate* mice, and
make sure their designs are as different from them as possible.
