I'll add a couple of personal favorites:
SpiralSynth (NOT SpiralSynthModular), and amSynthe.
These are less flexible than the big modular synths, but also
they are quick to get interesting sounds in.
but I wish amsynthe didn't make clicky noises when I use the random
modulator... just needs a lowpass filter on that thing...
