linuxsampler (with its frontend qsampler) does wavetablesynthesis
based on the famous gig-format of GigaSampler.

zynaddsubfx does synthesis with oscillators/etc.

fluidsynth (gui: qsynth) does wavetablesynthesis using the
sf2-soundfonts created by / for creative's soundblaster chips.

aeolus is an organ synth that sound like a real organ and even better
than some real organs thanks to the great work of fons adriansen.

hydrogen does drumloops and drum synthesis. PD, AMS, OmSynth and many
more do synthesis with pluggable modules...

You should also take a look at jackit.sf.net, they also list software
that uses jack...
