One solution is to use ac3jack ( http://essej.net/ac3jack )
which encodes AC3 from multichannel jack inputs. It uses the ffmpeg
library to do the encoding right now which *can* do multichannel. The
quality is average, probably not comparable to what you get out of
commercial encoders and what you hear on hollywood DVDs.
