You mean the situation where you just use a stereo mic to record
a complete orchestra or smaller group ?

In that case you have to fix thing *while recording*.

Problems could be instruments or performers out of balance,
bad stereo imaging, too much room sound, background noises,...
None of these can be 'easily fixed' with multiband compression.
Usually there's not much you can do about those at all.
