wow, great job.
I take it you know
http://createdigitalmusic.com/2008/12/intimate-control-multi-touch-new-models-and-what-2009-is-really-about/
which seems to be very similar.

http://www.instructables.com/id/A-position-sensitive-midi-drum-pad/
looks like it's a great basis for one already.
It can be on the lower end of the suggested page-count. And I guess that
explaining how the hw/sw works and giving a short demo will easily fill
a 30 min presentation.
Basically we'd like to encourage authors to submit some lasting
documentation that others can built upon, reference and discuss.
just grab
http://wiki.linuxaudio.org/_media/lac2011/lac2011-templates.tar.bz2 -
it's easier than you think.

There have been quite some informal demo sessions which were not on the
program at LACs. - You know how this goes when hackers & artists get
together..
It might be a good idea to allot a timeslot for lightning-talks and
short presentations, because some of said demos accounted for less
participation in concurrent main-tracks.
I'm CCing the the organizing committee on this.
best,
