It's actually pretty easy to see your jack setup on a terminal.

I use esjit for connections:

And meterec does a great job as a VU meter:
http://sourceforge.net/projects/meterec/

meterec is a very simplistic console recorder, but you can run it as
meter, too, without the recording functionality.

I personally use these tools a lot on my main computer, I like to keep
X server away from my machine.
