Ecasound can do it, it has a wealth of commandlne options to control output channels.

Csound and others of the kind can also perform very well. The setup may be difficult, but the control you have is very powerful.

Even mplayer can play files to select JACK channels.

I believe sndfile has a JACK player, but I've never tried it.

You can also configure a JACK plugin in ALSA, if your soundcard is supported by ALSA. That way you can use further commandline players, including aplay and possibly sox and the normal sndfile-play.

All of these players have a lot of commandline options and most of them offer good documentation, starting with man pages.
