A few things they probably don't emulate:

- ageing and failure
- thermal noise
- temperature dependence
- electromagnetic pickup
- crosstalk
- microphony
- dirty contacts
 
And why should these be less relevant than what actually is
emulated ?

This whole 'emulation of analog gear' circus is one big scam.
There is absolutely no reason to believe that it produces a
'better' sound than a straightforward digital implementation
of the required function (EQ, compression,... )

Assuming it has no obvious defects and provides the required
functionality, what comes out of a DAW or digital mixer or
analog mixer depends entirely on the skill and preferences
of the person using it. The rest is plain nonsense.

One could as well say that a writer using a $3000 fountain
pen will produce better literature than one using a text
processor or a ballpoint.
