Jonathan,
   Ardour has a habit of assigning as many tracks as you have outputs to
physical outputs, and then maybe not assigning the rest of the, You need
to do it in the OUTPUT section of each track.

   Possibly a better way to do this, should you be interested, is to
create a Audio Bus to sever as a Master Fader, and then assign the
outputs of all of your tracks to the input of that Audio Bus. YOu assign
the output of the Audio Bus to your outputs, Alsa:playback_1/2.
