If you use JACK then you will want to get jack meterbridge which gives
you a few different options for displaying the levels. Then you can
record with any jack aware app.
Personally I use arecord and then adjust the volume level with a sound
editor later. The more you do it the better your ear gets at knowing a
good level to start with.
Sweep is great but there are many choices:
glame
gsmp
wavesurfer
sweep
audacity
ardour
are ones that get regularly mentioned around here.
