That's what I do, too (only I use abc2ly and ly2dvi instead of
abcm2ps, because abcm2ps doesn't do well with unbarred music), but I
still investigate GUIs on the grounds that typing lyrics with a lot of
melismas is still a pain.

I did that in a very ancient ABC environment (circa 1998 or so) and
have since converted to using lilypond-book. If you don't have tunes
that take more than one page, or if current abcm2ps will give you
enough control over page breaks, it might be doable. Another thing to
consider is whether it lets you insert graphics -- you might not want
to do a whole book without any (non-music) graphics at all.
