Food is suitable analogy. How much processed food does one eat every
day ? How much processed is it ?
It is very complex to make low wheat content soba. A lot of skill is
required. So there are people out there doing them. But still, it is
up to the person who cooks them at home to respect the craftsmanship as
it is also possible to undercook or overcook them.
