Well I do alot of multi-track and I've found a few promising ones for which I've had mixed success/crashes.

Broadcast2000 is good ( sourceforge ) I find ( sometimes crashes on me but I"m not sure if its the app or my soundcard driver ) and there is audacity...both do multi-track /record but broadcast has more features at moment.

There is also a very nice upcoming audio app ( can't comment directly I can't use it ) called ardour ,,which at moment requires alsa ..and there is no current ability to use with end-user sound card ..both these I believe are being worked on currently and when done should provide a sweet app for linux users......its over at sourceforge if you fit requirements.

Glame looks promising if one can get past its unusual interface....

You can also try going the route of Wine. I can't get sonic foundry's app installed through it yet but I've not had time to fuss with various paramaters so you might have better luck. I don't know if it works well with passing through to the /dev/dsp but it might be a stop-gap for someone that really needs something only a winapp is providing etc.etc....the mailing list is excellent if you need assistance.
